Sweet Potato Enchiladas

2 sweet potatoes
1 red bell pepper
2 garlic cloves
1/2 onion
2 tablespoons butter
1 teaspoon olive oil
1 can black beans
2 cups cooked rice
2 cups shredded cheese
tortillas

Place butter and olive oil in a medium saute pan over medium heat. Add the sliced onion, season with salt and peopper to taste and saute for 10 minutes or until the onions are limp. Reduce heat to low and cook onions for another 10 minutes or until they have broken down completely and are caramelized. Add the garlic cloves and bell pepper.

Mix the rice, sweet potatoes and black beans together. Layer in tortillas: rice/sweet potatoes/black bean mixture, caramelized onions, cheese. Put in a casserole dish and cook at 350 for 20 minutes.

Amazing Brussel Sprouts

1 lb brussel sprouts
3 tablespoons butter
1 tablespoon honey mustard
1/4 teaspoon salt

Bring brussel sprouts just to a boil. Drain. Put butter, honey mustard and salt on.

Orange Chicken with Rice

4 chicken breasts
6 oz (1/2 can) frozen orange concentrate
3 tablespoons brown sugar
1 teaspoon balsamic vinegar
3 tablesppons ketchup
sesame seeds

Place chicken in crockpot. Mix the orange concentrate, brown sugar, balsamic vinegar and ketchup. Pour on top of chicken. Turn on for 4-5 hours on low. Sprinkle with sesame seeds.

Cook some rice to go with it and dinner's ready!

Apple Glazed Pork Chops

2 pounds pork chops
salt and pepper to taste
1/4 cup apple juice
3 tablespoons brown sugar (less if using sweetened apple juice)
3 apples, quartered
1 teaspoon ginger, ground

Rub pork chops with salt and pepper.

Place apple quarters in bottom of crockpot. Place pork chops on top of apples.

Combine apple juice, brown sugar and ginger. Pour over top of pork chops. Cover and cook on low for 4-5 hours or until done.
